肥皂是脂肪酸金属盐的总称。通式为rcoom，式中rcoo为脂肪酸根，m为金属离子。日用肥皂中的脂肪酸碳数一般为10-18，金属主要是钠或钾等碱金属，也有用氨及某些有机碱如乙醇胺、三乙醇胺等制成特殊用途肥皂的。

　　广义上，油脂、蜡、松香或脂肪酸等和碱类起皂化或中和反应所得的脂肪酸盐，皆可称为肥皂。肥皂能溶于水，有洗涤去污作用。肥皂的各类有香皂，又称盥洗皂、金属皂和复合皂。
